Photoshop Undressed! Switching selection preview quickly in Color Range
When using the Select » Color Range dialog, here’s a quick way to switch the selection preview from greyscale to none in the document window without using the Selection Preview pop-up menu.
Set the Selection Preview to Grayscale and then press P. That will toggle the document preview between Grayscale and None.

To toggle the preview in the Color Range proxy window, press Command (Mac OS), Ctrl (Windows).
